Did you know that you can make a HEALTHIER ice cream by simply blending up frozen banana in a food processor? For those of you who, like me, for one reason or another, need to cut down on your refined sugar intake or dairy intake, this recipe may be for YOU! I have used it in many flavours. [Note: This is definitely the best when eaten soft-frozen out of the blender! But you can put it in the freezer... then you may wish to microwave it for a few seconds to soften it back up!] Writing this to you, I was inspired to go make another batch! Enjoy! ~Sonia
BANANA Ice Cream – Flavours
Basic Ice cream – pieces of frozen banana whirled in a food processor, add a bit of coconut cream or other milk of choice if desired, and maybe vanilla.
FLAVOURS:
Chocolate Banana Ice Cream: Use 3 bananas. Add 1/4 tsp pure vanilla extract, pinch salt, and 3 tbsp cocoa powder.
Mint Chocolate Chip: Use 2 bananas and a pinch of salt. Add 1/8 tsp pure peppermint extract (or more if desired), and stir in chocolate chips or cacao nibs after blending. Optional, blend in a pinch of spirulina or a small handful spinach for color and an extra nutrient boost.
Peanut Butter: Make the original recipe below, adding 2-3 tbsp peanut butter or another nut butter or allergy-friendly alternative before blending.
Coffee: Add a strong coffee mixture to the original recipe, along with vanilla. (Suggested: a tablespoon of coffee powder to about 1/3 cup coconut cream or milk. ... or to your own taste.)
Very Berry: Make the original recipe below, adding 1 cup frozen berries of choice and 1/8 tsp pure vanilla extract.
Strawberry: Use 2 bananas. Blend in 1/2 cup frozen strawberries. Add 1/4 tsp pure vanilla extract and optional shake of cinnamon.
